Nutrient-Rich Ingredients
Here’s a closer look at what makes this high-protein vegan minestrone soup shine:

- Extra virgin olive oil (or avocado oil) – for a heart-healthy fat that adds richness and helps soften the veggies.
- Onion – a flavor base that adds a mellow sweetness. Feel free to use your choice of white onion, sweet onion, or yellow onion.
- Celery and carrots – classic soup staples for crunch, color, flavor, and nutrients.
- Fresh Garlic – adds depth and aroma to the soup’s base.
- Diced tomatoes – brings acidity and body to the rich tomato broth.
- White beans – a creamy, protein-rich legume that pairs beautifully with pasta.
- Chickpea pasta – a gluten-free option that adds more bulk and calories to the soup (and also ups the protein!)
- Vegetable bouillon paste – intensifies the flavor without needing boxed vegetable broth. I keep this as a staple in my fridge at all times as it's so versatile.
- Salt, rosemary, and parsley – seasonings and herbs that tie all the flavors together.
- Lemon juice – a splash at the end brightens up the entire dish.
- If you’re into adding a bit of heat, a pinch of red pepper flakes is a great way to balance the earthy flavors with a little kick. Or top your bowl with vegan parmesan cheese for an added savory layer.

How To Make The Best Vegan Minestrone Soup
Here's how you make it in just one pot. And make sure to check out the video for an easy overview of all of the steps.

Heat a large soup pot over medium high heat. Add oil and let the oil heat up. Add onion, carrots, celery, and salt. Stir to coat the veggies in salt and oil then saute for about 5 minutes or until the onion is browned and translucent, stirring occasionally.

Stir in minced garlic and add the can of diced tomatoes. Cook for another 5 minutes to reduce down the tomatoes. Then add the rosemary and vegetable bouillon and reduce or cook another 5 minutes until most of the liquid has evaporated. (This helps add more flavor to the soup!)

Add in the water and chickpea pasta and stir to combine. Bring to a simmer and let cook another 10 minutes or until the chickpea pasta is al dente.

Then add the white beans, lemon juice, fresh parsley, and salt to taste. Stir to combine. Serve with crusty bread and enjoy!
Perfect for Meal Prep
This easy vegan minestrone soup stores beautifully, making it a smart choice for meal prep. Once the soup cools, transfer it to an airtight container and keep it in the fridge for up to five days. You can also freeze it for longer storage.
When reheating, bring it to medium heat and stir occasionally until warmed through. If the soup has thickened, just add a splash of water or vegetable broth to loosen it back up.
Tip: Since gluten-free pasta can sometimes get too soft over time, consider cooking the pasta separately and adding it to each serving before eating. That way, you’ll keep the texture perfectly al dente.

Serving Suggestions for Vegan Minestrone Soup
Serve this hearty soup with a thick slice of crusty bread or a side salad topped with fresh parsley and a drizzle of olive oil. It’s a complete meal on its own, but these extras elevate it even further.
Pair it with:
- A vegan grilled cheese sandwich or mediterranean veggie sandwich
- Roasted vegetables or potatoes
- A baked sweet potato
Customize It Your Way
This vegan minestrone soup recipe is endlessly flexible. While this version skips zucchini and green beans, you can absolutely toss in some fresh green beans or even butternut squash when in season or if you have them on hand. Don’t be afraid to get creative with whatever frozen or fresh veggies are in your fridge and freezer.
For a variation next time, try swapping the white beans for dark red kidney beans or adding a spoonful of nutritional yeast for a cheesy, umami twist.

I used my Cuisinart pots and pans set stock pot for this recipe. It's perfect for big batches of soups, stews, pastas, or chilis.
